Recipe Chicken Veggie Pocket

Baked Chicken and Veggie Pocket


Ingredients

1 large Red Pepper
1 large Green Pepper
1 large Onion
8 red Bliss Potatoes
2 small Zucchini or Summer Squash
Chicken breast (I bought a family pack and cut each breast in half)
8 tlbs Olive Oil
Mortons Season all
Basil leaves
Aluminum Foil

Prep Time 15 minutes




Wash and cut all veggies, I sliced the squash and potatoes in circle shapes. I diced the onion with my pampered chef food chopper.  I cut foil about 16"  and made 8 of them. I played that on the counter and placed a breast on each one. Added the cut veggies to each one then a tablespoon of olive oil on each with a sprinkle of each of the seasonings.



















Then wrap each in the foil.
I added another piece of foil to each so it wouldn't leak on my oven while cooking.

I kept out two for dinner for tonight.
Transfer foil packets to a baking sheet.
Bake 350ยบ for 35 to 40 minutes, or until chicken is cooked through.
Serve .





The rest I am putting in Glad freezer bags to freeze for three more dinners. The cost for this was about $15.00 total and we have four meals for two people. Here is a picture of the cooked meal. It was really yummy and very easy to do.
